Bottled vs. Tap Water: 5 Key Differences You Should Know
When it comes to staying hydrated, not all water is created equal. As both a brewer and chemical engineer here in Kansas City, I’ve spent years thinking about water quality,
"For me, brewing is both a craft and a conversation. I love experimenting with new styles and ingredients, but I always come back to what makes a beer memorable — balance, freshness, and a little personality. At Border, we’re constantly exploring new ideas while staying true to our love for small-batch brewing. Whether it's a bold IPA or a smooth, drinkable lager, I hope every sip gives you a taste of what we’re all about."

You’ve probably heard that draft beer should taste better than bottles or cans—and that’s usually true. It’s fresher, stored cold, and served straight from the keg without all the light and oxygen exposure that packaged beer gets.
But if you’ve ever had a draft beer that tasted… weird? Like buttered popcorn or just plain off? That’s not the beer’s fault—it’s the lines.
Draft systems need regular, professional cleaning because beer lines are basically moisture-rich sugar highways for bacteria and wild yeast. If those lines aren’t cleaned every couple weeks? You’re not just drinking beer—you’re drinking whatever’s been growing in there.
That buttered popcorn flavor? It’s a compound called diacetyl, and it’s one of the first signs of an infected line. It can completely ruin an otherwise great beer.
This is exactly why we take line cleaning so seriously at the taproom. Clean lines = clean beer. Every time.
So if something tastes off in your next pour? Ask when the lines were last cleaned. Any good bar will respect the question.

You ever wonder what makes pumpkin beers taste like pumpkin? Spoiler: it’s not the pumpkin.
It’s all about the spices—cinnamon, nutmeg, allspice. That cozy fall flavor we all love? It’s basically pumpkin spice beer, whether there’s actual pumpkin in the brew or not.
Here’s a fun trick: grab your favorite beer, add a tiny pinch of those three spices, and boom—you’ve got yourself a DIY pumpkin beer at home. 🍂🎃
If you try it, tag us or drop a comment. Curious what beers you’re spicing up!
